Around our shop you’ll notice a chemical compound printed on our cups and across the floor. But caffeine is just one of more than 1,000 chemical compounds in coffee (and was intended to act as a pest repellent by nature, protecting the growing coffee plant).
The pursuit of the God Shot (a term that describes the perfect shot of Espresso) is what drives us, on the Espresso machine as well as in our manual brews. Every coffee we chose to work with tells us what it needs in order to shine, and as Baristas, we listen. From grind size, dose, mineral content in water, brew temperature, technique, tool and ratios - we walk the line of learned skill and trust in the process.
And all starts with beans that excite us: sourced from roasters that have personal relationships with farmers at origin, or are sourced directly from farms we visited, often processed experimentally and most importantly, paid fairly.
