Europa Universalis IV - Countries is a fan made app with list of available in the game countries sorted by four difficulty levels - easy, normal, hard and pro. With that app you can choose a country that won't be toohard or too easy for you. You can also find here examples of countries, which you can play in multiplayer for 2,3,4 or 5 players.
