We're always looking for new ways to switch up our weeknight chicken dinner, and when we're craving something light and easy, this one-pan meal is one we turn to again and again. Chicken, asparagus and cherry tomatoes are all cooked alongside a sharp, acidic, yet sweet homemade balsamic glaze in this recipe, so you can enjoy a dinner with maximum flavor and minimum cleanup. It's also just as versatile as it is easy: This meal is an ideal spring dinner, but you can switch up the veggies for whatever is in season to enjoy all year round.
What is balsamic glaze?
A balsamic glaze is a reduction of balsamic vinegar; it's created by simmering balsamic vinegar in a sauce pan until it's thick and reduced.We create the almost-syrupy glaze in this recipe by cooking a balsamic, honey and garlic vinaigrette along with our chicken and veggies.
Can I use chicken breasts instead?
Absolutely!Chicken breasts are much thicker and larger than chicken tenders, so you’ll want to cut them into strips before you cook them: Just slice each chicken breast lengthwise into three or four strips, about 1” wide and 5-6 “ long. From there, you can cook them as directed in the recipe.
My sauce is thickened but my chicken is still pink. What do I do?
If your sauce has cooked down into a perfect glaze, but your chicken is still undercooked, add about a tablespoon of water to the pan and keep cooking. The water should loosen up the glaze so you can finish cooking the chicken without running the risk of over reducing the glaze.
What should I serve this with?
Since this is a one-pan dinner, you can serve it completely on its own! But, if you wanted to add a carb (and we’re often in favor of carbs), consider serving it over a bed of brown rice or with a loaf of crusty bread to sop up all of that delicious sauce.
