To change the color / background of the watch face, use the "Customize" option on the watch or in the Galaxy Wearable app.

The gray watch face visible in the graphics in the store is the "Always On Display" function. It is displayed automatically when the "Always On Display" function is active. It is not an additional color of the watch face that can be selected by settings.
