We have discovered a succulent novelty for lovers of the Neapolitan tradition of pizza: Fratè 3.2. This is the name of the brand new fry pizzeria inaugurated in November 2017 in Gagliano, an ancient village of Catanzaro, even before the birth of the city to which it belongs.
In Gagliano you can breathe a good, ancient and healthy air and it is no surprise that a pizzeria designed to bring prestige to the Neapolitan tradition, while not giving up renewal and reworking, has taken root right here, away from the busy and chaotic streets of the city center .
The place is simple, straightforward and welcoming.
On one wall we see a trompe l'oeil that dispels any doubt about the type of pizza and gastronomic specialties that we will taste, depicting a scene from the beautiful film "The gold of Naples", with Sofia Loren who stands out in the foreground in one of the most famous alleys of the city, the one in which there is a bust of Pulcinella.
Luca and Luigi Corsi, owners of the restaurant, welcome us with joviality and freshness and are passionately partakers of such a love for Neapolitan pizza that Luigi tells us, of having wanted to pursue this activity after having worked with the best pizzerias, and of having conceived from always the idea of opening a pizzeria in which to combine tradition with innovation, in an almost sacred respect for raw materials and tools.
The oven, for example, handcrafted in the manner of the ancient ovens of the past, designed and coordinated by Luigi himself, so that it perfectly meets his needs for conduction and maintenance of heat.
But let's get to the main course, to stay on the subject: his majesty the Neapolitan pizza. And here Luigi describes the personal choices that lead him to make a real Neapolitan pizza, such as the choice of flour, first of all.
Luigi uses "Anima Verace", 00 soft wheat flour specially designed for pizza and provided with a certificate of suitability for the parameters and quality requirements established by the Official Disciplinary for the creation of the real Neapolitan pizza, produced by the Molitoria Denti industry.
