Owner Chef Daisuke Mori
Born in Gifu Prefecture.
After graduating from Tokyo Confectionery School, he worked at patisseries in Tokyo such as "Roysdal" and "Grand Hyatt Tokyo" before moving to France.
Studied at ``Laurent Duchenne (M.O.F.)'' and ``Moisin'' in Paris.
Worked as a chef and pastry chef at "Moisin".
After returning to Japan, he worked as a chef and pastry chef at Toyosu Patisserie SAKURA in Tokyo since its opening.
Developed a souvenir to commemorate the opening of the Shin-Kabukiza theater, ``KABUKU~hen''.
Appointed as an official technical instructor of the Japan Western Confectionery Association Federation.
