Kharcho is a traditional Georgian first course and is prepared according to the classic recipe on the basis of beef broth with rice, walnuts, greens, fragrant spices and sour Tkemali sauce. In Russia, for the preparation of this soup, instead of plum sauce, they often use tomato paste or fresh tomatoes, or both. As a meat base Kharcho can be used in general, almost any meat.
